"Best Part Of The Muffin" Cookies

Our latest recipe is half muffin/half cookie and all parts delicious. ‘Best-Part-of-the-Muffin’ Cookies are best enjoyed with fresh fruit and hot coffee in bed this Sunday. Trust us, the moms in your life will thank you.

"Best Part Of The Muffin" Cookies

Ingredients:

  • 2 cups granola or rolled oats
  • 3/4 cups flour or 1 1/2 scoops of vanilla protein powder
  • 2 tbsp Wedderspoon KFactor 16 Manuka Honey
  • 1/4 cup maple syrup or low sugar maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp organic coconut oil
  • 1/2 tsp baking soda
  • 1/3 cup chopped almonds
  • 1/4 tsp sea salt
  • 2 oz cashew milk (not needed if you want more of a cookie texture vs a fluffy muffin texture)

    Directions:

    1. Preheat the over 350°F
    2. Mix dry ingredients in a large bowl until well-combined
    3. Mix in wet ingredients
    4. Line a baking tray with parchment paper and spray with non-stick spray
    5. Evenly divide batter into 12-15 cookies and bake for about 10-12 minutes
