Mother’s Day is around the corner and what sweeter way to treat Mom than with a homemade breakfast? Our Morning Glory Muffins topped with creamy Honey Butter are great on their own as a light breakfast, and also the perfect centerpiece for a brunch spread.

Morning Glory Muffins & Honey Butter

Ingredients:

Muffins

  • 1/2 cup brown sugar
  • 1/2 cup coconut sugar
  • 3 tbsp Wedderspoon Manuka Honey
  • 2 1/4 cups flour
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 12 tsp salt
  • 1/2 cup shredded coconut
  • 3/4 cup raisins
  • 1 apple, grated
  • 1 cup carrots, grated
  • 1 cup pinapple chunks
  • 1/2 cup coarsely chopped walnuts or pecans
  • 3 eggs
  • 1/2 cup coconut oil, melted
  • 1 tsp vanilla extract

    Honey Butter

    • 1 stick sweet cream butter, room temperature
    • 2 tbsp Wedderspoon Manuka Honey 
    • 1 tsp cinnamon
    • 1 tbsp coconut sugar

      Directions:

      Muffins

      1. Preheat oven to 350°F
      2. Mix together dry ingredients. In a separate bowl mix eggs, oil and vanilla. Combine with dry ingredients until smooth. Add remaining ingredients and mix well
      3. Line cupcake trays with paper liners and spray with non-stick spray. Fill each cup just under the top
      4. Bake for 30 to 35 minutes

      Honey Butter

      1. Mix all ingredients together in a bowl and store in air tight container. Refrigerate until ready to use. Spread butter on warmed muffins
