Thai Peanut Zucchini Noodles

Tired of serving that classic pasta dish every week? Switch it up with a light, refreshing and more healthy alternative. Zucchini noodles, or, zoodles, are very easy to prepare, don’t require much prep time and won’t require you to purchase a ton of special cooking tools. If you don’t already own a spiralizer (to turn the zucchini into zoodles), don’t fret. There are a ton of alternative methods that can be found online with a quick Google search. Zucchini has a subtle taste which makes it very versatile. Zoodles will take on the flavor of whatever other ingredients you choose to use. This week we’re sharing a great Asian-inspired zoodles recipe that is sure to entice your tastebuds. The spicy ingredients this recipe calls for are sweetened up a bit with our Wedderspoon Manuka honey, leaving you with a truly sweet and spicy taste. Enjoy!

Thai Peanut Zucchini Noodles

Ingredients:

Zucchini Noodles

  • 1-2 large zucchinis, washed and spiraled
  • 1 sliced cucumber
  • 1/2 cup sliced carrots
  • 1 tbsp sesame seeds
  • 1-2 green onions, chopped

    Sauce

    • 1 tbsp peanut butter or peanut butter powder
    • 1 tbsp Wedderspoon Manuka honey
    • 1 tbsp soy sauce
    • 1 tsp curry powder
    • 2 tbsp coconut milk
    • 1/2 tsp garlic chili paste
    • 1 tsp vinegar

      Directions:

      1. Mix the dressing well and stir into veggies.
      2. Top with scallion and sesame seeds. Chill or serve immediately.
